This involves improvements at all stages of production, from improving coffee plant growing, harvesting, and processing, to stronger relationships between coffee growers, traders, and roasters, to higher quality and fresh roasting, at times called “microroasting” (by analogy with microbrew beer), to skilled brewing.
ということらしく、「コーヒーはワインのように熟練した職人によってつくられるべきものだ」というのが根本的な思想となるもののようです。
清澄白河にあるのは焙煎所で、そこでコーヒーを飲むこともできる…という方が正しい表現な気がしています。焙煎したての豆でコーヒーを提供できるように、必要な分だけを焙煎して提供するというスタイル。焙煎した豆は丁寧にドリップしてくれます:

シングルオリジン頼んだのですが、やや酸味が効いてるのかなと思います。味は日本のスペシャリティコーヒーと呼ばれるような高級なコーヒー (一杯800円くらいするようなやつね)と同じで、これを500円程度で提供していることにむしろ驚きを覚えます。価格破壊と言えそうな気がします。その理由はたぶんここが焙煎スペースで、喫茶をメインの目的にしてはいないからなんだろと思います。日本の喫茶店に影響を受けたと聞きますが、自家焙煎の喫茶店に影響受けたんだと思っています。
ポット単位でオーダーできて、すぐに飲める近距離にオフィスがあれば、毎日頼んじゃうと思います。The Second Waveの代表格のスタバよりも高級志向で、値段もお手軽ですからね。
